Embarked on a delightful exploration of Balinese culinary traditions at Shore Amora Canggu, under the expert guidance of Chef Tri. The session commenced with the preparation of Lawar Kacang, a classic Balinese salad renowned for its intricate blend of flavors and textures. With meticulous instruction from Chef Tri, we combined finely chopped green beans, grated coconut, coconut milk, and an assortment of aromatic spices to create a harmonious medley of savory and earthy tones, enhanced by the gentle sweetness of coconut.

Following this, we delved into the preparation of Ayam Sambal Matah, a beloved Balinese dish celebrated for its bold and spicy profile. Chef Tri skillfully led us through the process of marinating tender chicken pieces in a tantalizing mixture of shallots, lemongrass, garlic, chili, and kaffir lime leaves. The sizzle of the pan filled the room with anticipation as we eagerly awaited the symphony of flavors that unfolded before us. The dish, when presented, showcased the mastery of Balinese spice combinations, offering a perfect equilibrium of heat and tanginess.

We then indulged in the quintessential Balinese dessert, Dadar Unti. Guided by Chef Tri, we meticulously prepared delicate coconut pancakes filled with a luscious blend of grated coconut, palm sugar, and fragrant pandan leaves. The aroma of toasted coconut filled the air, heightening our anticipation for the culinary delight that awaited us.
